Moroccan Harcha - Semolina mini pan bread :

easy Moroccan Harcha


Harcha is a semolina flat bread well known in morocco, You can find it available at bakeries or even at small shops at the local market that specialize at Harcha and Mesemen (Moroccan square shaped dough crepes ). And it is best served warm with a cup of mint tea, and you can spread it with honey, jam, cheese or chocolate or nut spread.

Let's dive in straight to the recipe πŸ˜‹

First : The ingredients You'll need :


  • 500g Semolina
  • 60ml vegetable oil
  • 60ml melted unsalted butter
  • 7g baking powder
  • 1tsp active dry yeast
  • 1tsp salt
  • 1tbs sugar 
  • 1tbs raw honey
  • 300ml milk


Second : For the preparation :


1. In a mixing bowl, combine your semolina,baking powder,salt and honey. Then add in your melted butter and oil. Mix so that you get a sand like consistency.Then let it rest for 10-15mn.
 
2. Add in your sugar and yest and pour a little of your warm milk to activate the yeast.
3. Pour in the rest of the milk and mix gently with your fingers,Cover the bowl with a cling film then let the batter rest for 15mn.



4. Sprinkle your work surface with semolina,Then start shaping your dough with a cookie cutter. You can make them as big as you like.
 
5. Preheat your pan over medium heat, Then reduce the heat to low before placing your Harcha.
Cook for 3-5 min on each side and remove them from the heat when the Harcha starts to dry and gets a beautiful golden brown color.

And VoilΓ ! You can serve it warm and bon appΓ©tit ! 

N.B: Harcha Recipe vary from a family to another, Our recipe is richer and softer than normal Harcha but if you want the original street food recipe, You only need to substitute milk with water,and Butter with vegetable oil.

Classic Cinnamon Rolls :

best easy quick cinnamon rolls

Hi everyone and welcome back to my baking series 😍
Today,I'm sharing with you the easiest yet most delicious recipe for the all time favorites Cinnamon Rolls ❤ This recipe is my favorite as it has great flavor and texture with the least effort and I guaranty you that you will have a lot of fun making them  πŸ’–
So without further a do lets jump to the recipe .

First : The ingredients You'll need :


  • 120ml Water
  • 110ml Milk
  • 350gr All purpose flour
  • 1tsp Salt
  • 9gr Active dry yeast
  • 112gr (1stick) Unsalted butter
  • 60gr Granulated sugar
  • 150gr Brown sugar
  • 1tbsp Ground cinnamon
  • 190gr Powdered sugar
  • 1 Egg
  • 1tbs Vanilla extract

Second : For the preparation :


activate yeast active dry yeast


  1. Warm up the water and milk to the touch,don't over heat it or else it will kill the yeast.Sprinkle the yeast on top of the liquid then add sugar as it will feed the yeast and help it multiply and activate.
  2. Give the mixture a stir so it well dissolve and let it set .
  3. After 10mn you should notice that the mixture has foamed up,which means that the yeast has been activated,then you are good to add 30gr of melted butter (make sure to let the butter cool a bit so that it wont kill the yeast),whisk well then add your egg afterwards.



  1. Add in the dry ingredients : flour and salt slowly to the mixture and combine with a whisk.
  2. After forming the dough,it should become unsticky,put it in a greased bowl.
  3. Cover the bowl with a towel and let it rise for 2h. 



In the meantime prepare your filling :

  1. In a bowl,soften the butter with a fork.
  2. Add in your brown sugar and cinnamon.
  3. Mix well until the sugar is fully coated with butter.



  1. After 2h has past,punch the dough to release the air.
  2. Keep kneading the dough on a floured surface for 5 to 10mn.
  3. Roll out the dough with a rolling pin in a rectangular shape.





  1. Spread the filling evenly  on the dough (You don't  want to miss any spot 😜 you will thank yourself later πŸ˜…)





   2. Roll up the dough tightly until you form a log.





  3. Cut your dough into 12 pieces starting from the middle of the log and cutting your way to the sides and try to make them as even as possible.









After placing the pieces in a greased pan,and letting them rise for 1h to 1h30mn,they will double in size and become nice and puffy ,that's when you know that they are ready for the oven.


Bake them in a preheated oven until golden brown,then you can glaze them with with a simple glaze as i did,with 190gr of powdered sugar,1tbs vanilla extract and keep adding milk little by little until you obtain the consistency of your liking.Or you can use a ready to use store bough vanilla glaze 😍

Gooey Chocolate Brownies :









Hi GlamFoodys ,
Today , I'm here to share with you this amazing , chocolaty , gooey and most importantly very tasty recipe . So if you are interested , keep on scrolling .



First,The ingredients you'll need :

 


  • 150g Flour
  • 150g castor sugar
  • 150gr butter
  • 2 eggs
  • 150gr dark chocolate
  • 4gr backing powder
  • 7gr vanilla sugar
  • chopped nuts for decoration ( I used walnuts and almond but you can use whatever type you have )



For the preparation :




First you need to chop the chocolate into smaller chunks .





Then , put it in a sauce pan with the batter in a low heat , and let them melt . Keep stirring and make sure to not let your chocolate burn .








Beat the eggs , sugar and vanilla well with a hand mixer , then add the chocolate and butter while mixing everything util well incorporated .







Add the flour and backing powder in batches , and mix well with a spatula .






Keep mixing until you can no longer see any flour .





Finally , add the chopped nuts and fold them in the mixture .





Grease your pan , and line it with parchment paper to prevent stickiness .








Pour the mixture into the pan ( I used 20X20 cm pan )





Put the pan in a 170°C preheated oven .



Leave it for 20mn , Then check If your brownies are baked .





Let your cake cool down , Then start cutting it in small cubes .



And voilΓ  , enjoy your extremely delicious  Brownies ❤🍫

APPLE CAKE

APPLE CAKE ( tart style )







Hi GlamFoodys 😍
I'm so excited to share with you this amazingly delicious apple cake , and I really hope that you guys will enjoy this recipe 😻



First these are the ingredients :




  • 3 eggs
  • 125g granulated sugar
  • 150ml oil
  • 75ml orange juice
  • 75ml lemon juice
  • lemon and orange zest
  • 110g plain yogurt
  • 16g baking powder
  • 8g vanilla sugar
  • 400g flour



 So let's start :






First , we put all the wet ingredients : eggs , oil , juice , yogurt, lemon and orange zest and we add : sugar , vanilla sugar in a mixer and we mix everything for 10mn or until the mixture start turning white and foaming.












The mixture should look something like this ; Then we pour it into a mixing bowl.









We add the flour and baking powder in batches , and we whisk well until everything is well combined .










You should get a slightly thick cake mixture to help prevent the apple slices from sinking .








We pour the cake batter into a tart pan (you can use any cake pan if you want )








We place the apple slices in a flower formation , then we put the cake in a 180°C oven for 40mn.









And finally , enjoy a slice of this amazing cake that bursts with flavors πŸ˜πŸ’–

Classic Muffins

Today,I'll walk you through the easiest steps to achieve the most delicious,chocolaty moist muffins.So If you are interested keep on scrolling 😍

First let's start with  what you'll need


  • 2 eggs
  • 80ml vegetable oil
  • 80gr granulated sugar
  • 1tbs bitter cocoa powder
  • 80gr chocolate pudding
  • 7gr baking powder
  • 240gr flour
The ingredients are pretty simple Ha πŸ˜…

Then let's jump to the directions 


Combine the eggs,sugar and oil really well.Then add the chocolate pudding and keep mixing.Add the cocoa powder,and mix the flour and baking soda in a separate bowl,and add them in batches to the mixture.And finally whisk well until everything is well incorporated .






You can start smelling the yumminess of chocolate at this point πŸ˜‰πŸ«

Now it's pouring time 


 With the help of an ice cream scoop.







You will start scooping the batter into the muffin cups,until you finish all the batter.







And at the end tap the pan to get rid of air bubbles





FINALLY! Let's bake the goodies 


Put the muffins in a 200°C preheated oven,and let them bake for 10mn.After 10mn reduce the temperature to 180°C and leave them for another 5mn. That's the key to having that amazing cracking surface πŸ˜»πŸ’—
